Peel the tough outer skin off the celery root.
Cut the peeled celery root into bite-sized rectangular pieces.
Fill a medium pot with water and bring it to a boil.
Drop the sugar and the lemon slice into the boiling water.
Add the celery root pieces to the pot.
Boil until the pieces are tender but not mushy (usually about 10 to 15 minutes, depending on the size).
Drain the celery root using a colander.
Discard the boiled lemon slice.
Transfer the warm celery root pieces to a serving bowl.
Drizzle the olive oil, vinegar, and a dash of fresh lemon juice over the vegetables.
Season generously with salt and freshly ground black pepper.
Toss everything gently to coat the pieces evenly.
Let the salad rest for a few minutes to absorb the flavors before serving. You can also finish with a sprinkle of fresh parsley for extra color.
