Let the butter soften at room temperature.
Brew half a liter of filter coffee (or more, as you like) and let it cool.
Separate the eggs.
Whisk the egg yolks with the sugar until foamy over a double boiler.
Mix mascarpone, pistachio paste, and the foamy egg yolks in a bowl.
Add vanilla powder.
Add the soft butter and mix everything well again.
Fold in half (25g) of the chopped pistachios.
Line the bottom of a mold of your choice with ladyfingers. Soak them in filter coffee as you like.
Spread the pistachio mascarpone mixture over the ladyfingers.
Repeat until everything is used up. Smooth the top with mascarpone mixture.
Sprinkle the remaining chopped pistachios as decoration over the smoothed surface.
Let the tiramisu sit in the fridge overnight or for at least 3 hours. Serve cold. Enjoy!!!
