A crisp and fruity iced tea made with cold-brewed peach tea and freshly strained peach puree. Served over plenty of ice with fresh mint, it makes a wonderfully refreshing cooler for warm afternoons.

Pour 1 l water into a large pitcher.
Add 4 cold-brew peach tea bags to the pitcher and let them steep for 8 minutes.
Remove and discard the cold-brew peach tea bags.
Wash, halve, and pit 3 peaches, reserving one thin slice per serving for garnish.
Chop the remaining peaches into rough chunks.
Transfer the chopped peaches to a blender and puree until completely smooth.
Set a fine-mesh strainer over a bowl and pour the peach puree into it.
Press the puree firmly with the back of a spoon to collect the strained peach juice and discard the dense pulp.
Pour the strained peach juice into the brewed tea in the pitcher and stir to combine.
Distribute 400 g ice cubes evenly among 4 tall glasses.
Pour the peach iced tea mixture over the ice in each glass.
Garnish each glass with the reserved peach slices and 4 stems of mint.
