Fry the quinoa balls with olive oil in a pan over medium heat until golden brown.
Squeeze the lemon and mix with the yogurt.
Season with salt and pepper.
Wash and chop the iceberg lettuce.
Wash the carrots, optionally peel them, and grate them coarsely.
Core the bell pepper and cut it into bite-sized pieces.
Optionally peel the cucumber, halve it lengthwise, and cut it into bite-sized pieces.
Mix the chopped vegetables with the prepared dressing. Season with salt and pepper.
Arrange the marinated salad nicely on two plates.
Place the crispy quinoa balls on the salad.
Pluck fresh cilantro as desired and sprinkle it over the salad and balls.
Take the remaining yogurt dressing and decorate the salad with it. I used a piping bag in the photo.
Serve the salad immediately and enjoy your light and delicious dish!
