Instructions

    Soak black-eyed peas in water for 24 hours, ensuring they are fully submerged.

    Drain the beans and put them into a blender.

    Add the ginger and salt and blend everything finely.

    Finely chop coriander and add it. (do not blend anymore)

    Form the mixture into small dumplings with a spoon.

    Heat the oil and deep-fry the formed dumplings until really brown and crispy.
