Wash the mint bunch thoroughly under cold water and shake it dry.
Put the roughly cut pineapple, the cut lime, the flaxseed oil, the coconut milk or coconut water, the water, the xylitol, and the washed mint into a blender or use an immersion blender.
Blend everything on high speed until a smooth liquid forms. Make sure there are no large pieces left and the mint is well chopped.
Pour the juice through a fine sieve to remove fruit fibers and mint leaves, if you prefer a particularly smooth juice. Squeeze the pulp well to extract all the juice.
Pour the juice into glasses and add a few ice cubes. Enjoy it immediately for the best refreshment.
