Place a pan over medium heat.
Add 2 slices Bacon.
Fry until the bacon is cooked and the fat has rendered. Leave the bacon and fat in the pan.
While the bacon cooks, crack 7 Eggs into a container.
Add 2 pinches Salt.
Add 4 pinches Pepper.
Stir the eggs until yolks and whites are just combined. Do not overmix.
Optional: Add a Knob of Butter to the pan with the bacon and rendered fat. Let it melt.
Pour the egg mixture into the hot pan with the bacon.
Cook over medium or medium-low heat, stirring occasionally for softer curds or more frequently for smaller curds, until the eggs reach your desired doneness. Be careful not to overcook.
Remove the pan from the heat once the eggs are cooked (they will continue to cook slightly off the heat).
Add 2 slices Emmental cheese to the hot eggs.
Stir gently until the cheese is melted and incorporated.
Serve immediately.
