Trim, wash, and slice 1 Leek into rings.
Peel and mince 2 cloves Garlic.
Warm 1 tbsp Olive Oil in a large pot over medium heat.
Add the sliced leek and minced garlic, sautéing for 3 minutes until softened.
Add the cubed pumpkin and sliced carrots to the pot.
Pour in 800 ml Vegetable Broth and bring to a boil.
Lower heat to medium-low, cover with a lid, and simmer for 18 minutes until the vegetables are tender.
Puree the soup with an immersion blender until completely smooth.
Stir in 1 tsp Salt, 0.5 tsp Black Pepper, and 1 pinch Nutmeg.
Slice 250 g Salsiccia into bite-sized medallions.
Heat the remaining 1 tbsp Olive Oil in a frying pan over medium-high heat.
Fry the sausage medallions for 6 minutes, turning occasionally until browned and cooked through.
Grate 60 g Cheddar coarsely.
Ladle the warm soup into serving bowls.
Arrange the browned salsiccia medallions in the center of each bowl.
