Banana Bread

If you have ripe bananas sitting in your kitchen and don’t want to throw them away, you have to try this soft, moist banana bread —simple and delicious.  Tip: Use very ripe bananas for deeper flavor, and stop mixing as soon as the flour is incorporated to keep the loaf tender.  Banana bread is a classic way to use overripe bananas and is especially popular during cooler months, when easy, oven-baked recipes make sense.  This loaf works well for breakfast, with coffee, or as a make-ahead bake that keeps well for a couple of days.

  • Salt1 pinch
  • Vanilla Extract7 grams
  • Baking Soda1 teaspoon
  • Chocolate Sprinkles

Preheat Oven

  1. 1

Preheat the oven to 180°C (top and bottom, no fan).

  2. 2

Line a baking tray with parchment paper, or grease the inside of the baking form to prevent sticking.

Prepare Wet Ingredients

  1. 3

In a bowl, mash 3 Bananas using a fork until they are mostly smooth (a few small lumps are okay).

  2. 4

Add 4 Eggs to the mashed bananas.

  3. 5

Add 7 g of Vanilla Extract.

  4. 6

    Mix these ingredients together.

  5. 7

Melt 80 g Butter either in a microwave-safe bowl or in a small saucepan over low heat.

  6. 8

    Let it cool slightly.

  7. 9

Pour the melted butter into the banana and egg mixture. Stir to combine.

    Add 150 g Flour in a bowl.

  2. 11

    A pinch of Salt

  3. 12

    1 tsp Baking Soda

Combine Mixtures

  1. 13

Gradually add the dry ingredients to the wet ingredients.

  2. 14

Pour Batter and Add Topping

  1. 15

Pour the finished batter evenly into the prepared baking form.

  2. 16

Prepare the remaining (fourth) banana by cutting it lengthwise into two halves.

  3. 17

  3. 21

To check if the bread is done, insert a toothpick or skewer into the center. If it comes out clean (without wet batter clinging to it), the bread is ready.

If not, bake for a few more minutes and test again.

Cool and Serve

  1. 23

Remove the banana bread from the oven.

  2. 24
